Ilish Bhapa

The first recipe is Ilish Bhapa. The ingredients for making this recipe are as follows –

Ingredients

  • Hilsa: 5-6 pieces
  • Poppy seeds: 4-5 tablespoons
  • Yellow mustard seeds: 2 tablespoons
  • Black mustard seeds: ½ tablespoon
  • Green chillies: 6-7
  • Lemon juice: ½ teaspoon
  • Turmeric powder- ½ teaspoon
  • Salt
  • Sugar
  • Kachi Ghani Mustard Oil

Recipe

  • Souse the mustard seeds and poppy seeds with a pinch of salt and sugar. 
  • Put on two green chillies and lemon juice and keep it there for 10-15 minutes
  • After soaking, make a paste 
  • Marinate the fish with salt and turmeric powder
  • Take a tiffin box, add mustard oil and place the fish pieces.  
  • Apply the paste and cover the fish pieces with the paste. 
  • Add green chillies and pour mustard oil on top of everything. Close the tiffin box. 
  • Steam it for 15 minutes on medium flame. 
  • Season it with kachi ghani mustard oil and your ilish bhapa is ready to be served.

Ilisher Begun Diye Jhol

The second recipe is Ilisher Begun Diye Jhol. The ingredients required to cook this recipe are as follows – 

Ingredients

  • Hilsa: 5-6 pieces
  • Brinjal: 1 (cut into medium pieces)
  • Ridge gourd: 1 (cut into medium pieces)
  • Green chillies: 6-7
  • Nigella seeds: 1 teaspoon
  • Turmeric powder: 1 tablespoon
  • Red chilli powder: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Kachi Ghani Mustard Oil
  • Salt

Recipe

  • Marinate the fish pieces with salt and turmeric powder
  • Shallow-fry the fish 
  • Shallow-fry the brinjal pieces 
  • Take a pan and pour mustard oil. Heat well. 
  • Add nigella seeds and 2-3 slit green chillies and temper the spices. 
  • Add some cumin powder and saute for 2-3 minutes
  • Add some water and season it. Make sure to cook till boiling on medium flame. 
  • Add the fish pieces and cover it. 
  • Cook for 5-7 minutes on low to medium flame.
  • Add brinjal and ridge gourd. Cook for another 3-4 minutes and add the green chillies

Ilish Paturi

The ingredients, needed to make Ilish Paturi dish, are as follows – 

Ingredients

  • Hilsa fish: 5-6 pieces
  • Coconut-yellow mustard seed-poppy seed paste-green chilli: Half cup
  • Banana leaves: 3 large (to be on the safe side)
  • Green chillies: 7-8
  • Turmeric powder: 1 teaspoon
  • Salt
  • Sugar
  • Mustard oil

Recipe

  • Marinate the fish with turmeric powder and salt. 
  • Make a paste of mustard oil, salt, spice paste, sugar and turmeric powder. 
  • Check the seasoning.
  • Cut the banana leaves into large pieces. Large pieces of banana leaves help to cover and tie up the dish from every corner. 
  • Roast the leaves on a non-stick pan 
  • Take each banana leaf and place the spice paste. Put a piece of ilish and cover the fish with the paste. 
  • Add a slit green chilli and pour some mustard oil on top
  • Cover the whole dish by wrapping it from all sides. 
  • Steam it for 15-20 minutes in a tiffin box in a half-submerged kadhai or pan on medium flame

Ingredients

  • Hilsa fish: 6 pieces
  • Yellow mustard paste: 1 and ½ tablespoon
  • Nigella seeds: ½ teaspoon
  • Green chillies: 3-4
  • Coconut milk: ½ cup
  • Turmeric powder: 1 tablespoon
  • Salt
  • Mustard oil

Recipe

  • Marinate the fish pieces with salt and turmeric powder
  • Take a pan, pour mustard oil and heat it 
  • Add some nigella seed and slit green chillies and temper it
  • Add turmeric powder, the mustard paste and green chillies with a pinch of salt. 
  • Cook it till the smell loses its raw nature  
  • Add coconut milk and cook for 5-7 minutes on low to medium flame 
  • Add the fish pieces and cook for about 5-7 minutes more

Ingredients

  • Hilsa: 6 pieces
  • Bitter gourd: 1 (cut into medium strips)
  • Raw banana: 1(cut into medium strips)
  • Raw papaya: 7-8 pieces peeled and cut into thick medium strips
  • Eggplant: 1 (cut into medium strips)
  • Sweet potatoes: 1 (cut into medium strips)
  • Potatoes: 2 (cut into medium strips)
  • Drumsticks: 2 (cut into medium strips)
  • Green chillies: 3-4
  • Panchforon: 1 teaspoon
  • Radhuni: ½ teaspoon
  • Radhuni paste: ½ teaspoon
  • Bay leaf: 2 small
  • Ginger-green chilli paste: 1 and ½ tablespoons
  • Yellow mustard paste: 1 and ½ tablespoon
  • Poppy seeds paste: 2 and ½ tablespoon
  • Milk: Half cup
  • Turmeric powder: 1 tablespoon
  • Salt
  • Sugar
  • Ghee
  • Kachi Ghani Mustard Oil

Recipe

  • Pour mustard oil into a pan. Saute the vegetables till they turn golden.
  • Marinate the fish with salt and turmeric powder. 
  • Shallow-fry it till the pieces turn light golden. 
  • Pour some more mustard oil, bay leaves, panchforon, radhuni and a small pinch of turmeric powder and leave it to temper 
  • Add the ginger-green chilli paste. Mix well 
  • Add the mustard paste and cook for 2-3 minutes 
  • Add the poppy seeds and cook for 3-5 minutes on low to medium flame
  • Add seasonings followed by milk and 1½ cups of water
  • Add on the sauteed vegetables and potatoes. 
  • Add the fish pieces and cook for 5-7 minutes on low flame
  • Add some green chillies and radiant paste and cook for 2-3 minutes
