Egg-Tadka

Dimer Torka (Egg Tadka)

This famous street food has found its way from the streets of Bengal into the homes of Bengal. It is a slow-cooked lentil preparation paired with scrambled eggs to eventually end up on your dining table as a  very nutritious and protein-packed meal. Made with the simplest ingredients that you can easily find in your kitchen, this wholesome dish is quite the flavourful comfort food. 

Ingredients :

  • ½ cup Arhar dal
  • ¼ Chana dal
  • 2 tbsp White Urad dal 
  • 1 cinnamon stick
  • 2 cloves
  • 2 cardamom pods
  • 2 onions – finely chop on onion and grind the other 
  • 2 tomatoes – finely diced
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 green chilli – slit into halves
  • 1 tsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tbsp dried fenugreek leaves 
  • 3 eggs
  •  2 ½ tbsp Doctors Choice Refined Sunflower oil
  • Salt to taste

Method : 

Begin this delicious recipe by pressure cooking the dals along with ¼ tsp turmeric powder, salt and 3 cups of water for about 5 whistles. 

In a deep wok, heat 2 tbsp Doctors Choice Refined Soybean oil with the cinnamon sticks, cardamom pods and cloves. Stir slowly so that the aroma is released from the whole spices. 

Add in the chopped onions with the green chillies and saute till the onions turn golden brown. Pour in the onion paste and saute till the smell of raw onions goes away. 

Incorporate the chopped tomatoes into the wok and saute till the tomato becomes soft and the oil separates. Add in all the spices and salt as per your liking. Stir gently for about 2 minutes. 

Now you include the cooked dal into along with the rest of the ingredients in the wok add water depending on the consistency you prefer. Give it a good stir and allow it to cook on low heat. 

Take another shallow pan, pour ½ tsp of Doctors Choice Refined Sunflower oil and break open the 3 eggs and scramble them.

Once the scrambled eggs are cooked, add it on top of the dal and let it cook for 2 minutes. 

Serve the recipe with roti, paratha or kulcha.
