Winter Special Sabzi Khichdi
With the cold chilly winters making an entry, everyone’s looking for meals that are not just flavorful, but warm enough to go well with the weather. When fresh vegetables and the iconic khichdi come together, there comes together a Bengali cuisine that that one fails to resist.
With a dish that sees no season, you ought to fall in love with a dish that has plentiful vegetables and surprises you to have more than just one serving. Not only is this dish a complete meal by itself, savoring it with papad or pakora helps bless your taste buds with traditional flavors.

Ingredients:
- 1 cup rice
- ¾ cup moong dal
- 1 tsp roasted coriander powder
- 1 tsp roasted cumin powder
- 2 bay leaves
- 3 tsp ginger
- 2 tsp turmeric powder
- 2 red chilies
- 2 green chilies
- 1.5 cup vegetables cut into cubes ( for eg- potato, carrot, cabbage, green peas, etc)
- 1 tbsp Doctors’ Choice Refined Sunflower Oil
- 1 tbsp ghee
- 3 cups water
Procedure:
- Fry the moong dal in a pan for 2-3 mins. Ensure not to add any oil to the pan
- Boil water in a large cooking bowl
- Add the rice into the bowl and boil for 3-4 mins
- Add the roasted moong dal and the boiled dal and rice for roughly 3 mins
- Add all the chopped veggies and boil for another 3 mins
- Heat Doctors’ Choice refined sunflower oil in a separate pan and add the ginger paste, bay leaves, and red chilies. Keep it till the aroma of the spices come out. Pour the same into the boiling water along with the dal and rice.
- Stir and add the green chilies, roasted coriander powder, turmeric powder, roasted cumin powder. Cook the same for another 5 mins
- Adjust the khichdi’s thickness and add hot water to adjust, if needed
- Turn off the fire once cooked and add ghee and mix well
