Ingredients :
200gm paneer (cottage cheese) that have been gently cut into small cubes
100gm fresh curd – whisked and kept aside
3 tsp mustard seeds
1 ½ tbsp poppy seeds
1 ½ tsp turmeric powder
1 tsp Kashmiri red chili powder
2 fresh green chillies, slit into halves
3 tbsp Doctors Choice Kachi Ghani Mustard oil
1 tsp salt to taste
2 tbsp chopped coriander leaves
Method :
Combine the mustard seeds and poppy seeds and add them to a blender. Add a little bit of water and blend the ingredients together till it forms a smooth paste. Scrape it off onto a bowl and keep the mixture aside.
In a small wok, heat Doctors Choice Kachi Ghani Mustard oil till earthy and aromatic wisps of smoke can be seen rising from the wok.
Gently pour in the whisked curd, turmeric powder, Kashmiri red chili powder and slitted green chillies.
Stir these ingredients continuously and lightly for about 2 minutes or till the oil separates from the mixture.
Once this process is complete you should be able to smell the delicious aroma from the cooked mixture.
Gently add the cubed paneer pieces to this aromatic mixture and sprinkle the chopped coriander leaves.
Mix all the ingredients thoroughly ensuring the paneer cubes are generously coated with the mixture.
Transfer the entire paneer mixture to a small bowl and shut the lid. Now take this bowl and steam it for about 15 minutes in a pressure cooker with a cup of water.
Switch off the flame and allow the steam to come out naturally, therefore ensuring that the paneer gets fully cooked.
Serve immediately with hot steamed rice.
Relish your winter afternoons with this scrumptious meal!
