Ingredients
- 5 karelas
- 2 boiled sweet potatoes
- 2 finely chopped tomatoes
- 1 inch finely chopped ginger
- 3 finely chopped green chilies
- ¼ tsp turmeric powder
- 1.2 tsp red chili powder
- 1 tsp garam masala powder
- 1 tsp chaat masala powder
- Salt to taste
- 2 tbsp Doctors’ Choice Kachi Ghani Mustard Oil
Procedure
- Peel the karela, cut them each into 1 inch and scoop out the seeds. Sprinkle salt and turmeric to remove all the bitterness. Let it all rest for roughly 20-25 mins
- To prepare the sweet potato masala, pressure cook the sweet potato with 1 cup of water and leave it for 3 whistles. Once cooled peel the potato
- Heat a skillet with Kachi Ghani Mustard Oil. Add ginger and allow it to soften. Add chopped tomatoes and green chilies and salt. Allow the tomatoes to turn mushy
- Add turmeric powder, red chili powder, garam masala, chat masala, and salt. Mix all well to keep the flavors intact
- Cook all for roughly 2 mins. Keep a check on the salt and spices
- Fill the karelas with the potato mixture. Ensure its intact so avoid any leakage
- Heat a pan with oil and place the karela with potato on the pan until it is cooked and has brown spots
- Cover the pan and cook. Once done sprinkle chaat masala over it and enjoy hot
