  • 500 gm conchiglie pasta
  • 3 tbsp physically refined rice bran oil
  • 2 onions, chopped
  • 3-4 tomatoes, finely chopped
  • 1 bunch green onions, chopped
  • 1 bunch leek
  • 1 tsp salt (or to taste)
  • 1 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tsp thyme
  • 10-12 basil leaves

Cooking Instructions:

Step 1:

Begin by bringing a generous amount of water to a vigorous boil in a large vessel. Add a pinch of salt to enhance the pasta’s flavour profile. Introduce the conchiglie pasta into the boiling water and cook it until it reaches the desired texture.

Step 2:
Once the pasta is cooked to perfection, promptly drain it and set it aside. Remember, timing is crucial here. Initiate the sauce-making process simultaneously to ensure optimal freshness and flavour.

Step 3:
In a non-stick pot, heat the edible cooking oil. Sauté the chopped onions, leek, and green onions until they turn translucent and exude their aromatic essence. Add in the garlic, either shredded or thinly sliced, for an extra dimension of flavour. Incorporate the finely chopped tomatoes, along with a sprinkle of salt, red chilli powder, and cumin powder.

For a smoother texture, blanching the tomatoes beforehand is recommended. Cover the pot and allow the ingredients to meld together until the tomatoes reach a tender consistency. Stir in the thyme and torn basil leaves, infusing the sauce with their fragrant allure.

Finally, introduce the cooked conchiglie pasta into the sauce, ensuring each shell is coated in the luscious medley of flavours.

Step 4:
Allow the pasta to gently simmer in the sauce for approximately 7-8 minutes, allowing ample time for the flavours to harmonise and the basil-infused aroma to permeate every bite.
