The mixture of green garlic and Doctor’s Choice Rice Bran Oil turns out to create a delectable and nutritious chicken curry during the short period when green garlic appears in season. Rice bran oil serves as a healthy edible cooking oil because it contains cholesterol-reducing qualities along with antioxidants and reaches a high smoking temperature. 

 

Ingredients:

  • 500g chicken (with or without bone)
  • ½ cup green garlic (chopped fine)
  • 2 tbsp Doctor’s Choice Rice Bran Oil
  • 1 onion (chopped finely)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 2 green chilies (slit)
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ cup yogurt (whisked)
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 1 cup water

 

 

Step 1: Sauté the Base

Place 2 tablespoons of Doctor’s Choice Rice Bran Oil into a kadhai before heating it. Heat 2 tbsp Doctor’s Choice Rice Bran Oil while adding chopped onions, which will gradually turn brown. Add ginger garlic paste and green chillies and stir it until the aroma fills the kitchen. 


Step 2: Cook the Chicken

Put the chicken pieces into the pan before frying them for 5 minutes at medium heat. Uncover the mixture only occasionally during cooking to maintain uniform results.


Step 3: Spice it Up

Combine medium-sized turmeric with red chilli powder along with coriander powder while stirring the mixture. After mixing the ingredients, let the spices evenly coat the chicken pieces. Add the tomato puree to the cooking pot and heat it until the oil separates from the other ingredients.


Step 4: Simmer and Finish

Mix yoghurt that has been beaten until smooth, then season with salt and combine before pouring in 1 measuring cup of water. The covered pot will require 15 minutes to fully develop a tender consistency in the chicken. Finish the dish with garam masala seasoning and decorate it with fresh coriander leaves.
