Mexican Paratha
At some point, we are all faced with the question regarding which nutritious and tasty dish can we take for tiffin?
Mexican Paratha is a rather colourful looking dish where desi meets international standards. This tempting item is a total steal and is bound to happily fill your stomach and also provide your body with the necessary nutrients it requires.
From now, tiffin breaks will be energising and fun with Mexican Parathas!
Ingredients:
For soya dough:
½ whole wheat flour
½ plain flour
¼ soya flour
3 tbsp soya milk
¼ tbsp Doctor’s Choice Refined Soybean oil
Salt to taste
For stuffing:
½ cup boiled and crushed sweet corn kernels
¼ cup chopped coloured capsicum (red, yellow and green)
¼ chopped tomatoes
½ cup tofu cubes
¼ grated processed cheese
1 tsp finely chopped green chillies
2 tbsp chopped coriander
2 tsp Doctor’s Choice Refined Soybean oil
Salt to taste
Method:
Combine all the stuffing ingredients into a bowl and divide it into 6 equal portions.
In another bowl, knead the mixtures for the dough to form a soft soya dough. Once ready, divide the dough into 12 equal portions.
Take one portion of the dough and roll it out evenly with a rolling pin.
Cook both sides of a roti till half done.
Gently place the half-done roti on a clean, dry and flat surface, place one portion of the stuffing in the centre and spread it out evenly on the roti.
Place another half cooked roti on top and lightly press the edges to ensure that the stuffing is well placed.
Sprinkle Doctor’s Choice Refined Soybean oil on the tava and gently place the roti with stuffing inside, on top of the tava.
Cook till both sides are golden brown.
Repeat the process with the remaining dough circles and stuffing.
Serve hot and relish it with any dip of your choice.
