Mochar Ghonto is a traditional Bengali dish that brings nostalgia, nutrition, and tradition to your table. In Bengali, mocha is banana blossom or banana flower, a lovely purple edible flower noticed at the tip of banana bunches.
Preparation of mochar ghonto narkel ar bhaja bori in Doctors’ Choice Cooking Oil, the heart-friendly soybean oil for cooking, enhances its nutritional content without rendering the food heavy or difficult to digest.
Ingredients
- 1 Banana Flower (Mocha), cleaned and finely chopped
- ½ cup Grated Coconut
- 50 g Bori (sun-dried lentil dumplings)
- 1 Tbsp Ginger Paste
- 4 Tbsp Doctors’ Choice refined soybean oil
- 2 Tsp Ghee
- 1 Tsp Turmeric Powder
- 1 Tsp Salt (adjust as needed)
- 1 Tsp Red Chili Powder
- 1 Tbsp Sugar
- 1 Tsp Bhaja Moshla (dry roasted spice blend)
- 1 Tsp Cumin Powder
- 5 Bay Leaves
- 2 Dry Red Chilies
- 1 Tsp Cumin Seeds
- ½ Tsp Asafoetida (Hing)
- Boil the Banana Flower
Add 2 cups of water to a pressure cooker.
Mix in the cleaned mocha along with ½ tsp turmeric and ½ tsp salt.
Close the lid and cook for 2 whistles on medium heat.
Once pressure releases, open the lid and add 2 cups of room-temperature water to cool it.Drain and mash the mocha using a masher or by hand once it’s cool.
- Fry the Bori
Heat Doctors’ Choice Refined soybean oil for cooking in a pan and frying the boris until crisp. Remove and set aside.
- Tempering
In the same oil, add 2 tsp ghee.
Tempering with bay leaves, cumin seeds, dry chillies, and hing.
Add 2 tbsp water to prevent the spices from burning.
Once the water evaporates, add the ginger paste and sauté.
- Add Spices
Mix in turmeric, red chilli powder, and cumin powder.
Stir in the sugar and check for salt.
- Cook the Mocha
Add the mashed banana flower and mix well.
Cook on low for 10 minutes. If dry or undercooked, add ½ cup of the reserved boiling water.
Continue cooking until soft and well blended.
- Final Assembly
Add half of the grated coconut and half of the crushed fried bori. Mix well.
Sprinkle in bhaja moshla and the remaining ghee. Stir thoroughly.
Garnish with the remaining coconut and whole fried boris.
Serving Suggestion:
Serve your warm, mushy Mochar Ghonto with steamed rice. In traditional Bengali meals, it’s served before dal for the perfect progression of flavours.
