Nasi Goreng (Indonesian Fried Rice)

Ingredients:
For the Chicken:
- 1 tbsp refined soybean oil
- 150 gms chicken breast
- 1 tbsp sweet soy sauce
For the Rice:
- 1.5 tbsp refined soybean oil
- 2 garlic cloves
- 1 tsp red chili- finely chopped
- 1 diced onion
- 3 cups cooked white rice
- 2 tbsp sweet soy sauce
- 2 tsp shrimp paste (optional)
For Garnishing:
- 4 fried eggs
- 1 sliced green onion
- Tomatoes and cucumbers cut into chunks
- Fried shallots
- Lime wedges
Procedure:
- Heat Doctors’ Choice refined soybean oil in a large wok and keep it over high heat
- Add chili and garlic. Stir it well for about 10 seconds
- Add the onions and cook it for over a minute
- Add the chicken and wait until it turns white. Add 1 tbsp of sweet soy sauce and cook for 1 minute (until the mixture is a bit caramelized)
- Add rice, 2 tbsp of sweet soy sauce and shrimp paste ( if necessary). Stir the mixture constantly for 2 minutes until the sauce reduces down and the rice starts to caramelize
- Turn off the flame and allow it to cool
- Serve hot and garnished with green onions, red chili and fried shallots
