How To Cook
- 1 cup all-purpose flour (maida)
- 1/4 cup rice flour
- 1/4 cup powdered sugar
- 1/4 tsp salt
- 1/4 cup melted ghee (clarified butter)
- 2 tbsp Doctors’ Choice rice bran oil
- Cold water (as needed)
For Sugar Syrup:
- 1 cup sugar
- 1/2 cup water
- 1 tsp lemon juice (optional)
Preparation:
1. Combine all-purpose flour, melted ghee, and cardamom powder in a bowl. Mix well until the flour resembles coarse crumbs. Knead the dough until it takes on a lovely consistency by gradually adding water. Give the dough 30 minutes to rest under a moist cloth.
2. Meanwhile, the sugar syrup needs to be prepared. Put the water and sugar in a pot and heat it until it boils.
3. Roll the dough into a large number of little balls. Each ball should be flattened into a disc.
4. The oil should be heated over medium heat in a deep-sided frying pan or kadai. The rolled-out dough should be fried in Doctors’ Choice rice bran oil until it is crispy and golden brown on both sides. Slide the dough into the oil with caution. You should flip the khaja over to make sure it fries evenly.
5. Using a slotted spoon, take out the fried khaja from the pan and allow it to drain on paper towels to get rid of any remaining oil.
6. Dip the fried khaja into the prepared sugar syrup to ensure they are well coated.
7. Before serving, give them a few minutes to soak up the syrup. Once the soaked khaja are taken out of the syrup, place them on a wire rack to chill and dry.
