Shrimp Scampi Mac and Cheese Recipe

Ingredients

  • 2 tbsp refined sunflower oil
  • 4 tbsp butter
  • ½ whole medium onion, finely diced
  • 4 garlic cloves, minced well
  • ½ kg large peeled shrimps
  • 2 juiced lemons
  • ½ cap white wine
  • Salt and ground black pepper 
  • 4 dashes of Tabasco or hot sauce (based on availability)
  • 8 oz. angel hair pasta
  • ½ cup grated parmesan cheese
  • Freshly chopped basil
  • Freshly chopped parsley

Procedure

  • Start by boiling the water for the pasta. Furthermore, take a large skillet and heat some refined sunflower oil in it. Melt and butter on a medium flame and cook the onions and garlic for roughly 2-3 mins, until the onions look translucent. 
  • Add in the shrimp and cook it for a few mins before squeezing in the lemon juice into the mixture. Add in the wine, salt, pepper and hot sauce. Stir the same for a few minutes on a low flame. 
  • Boil the angel hair pasta in hot boiling water and drain them once done. Don’t forget to keep aside 1-2 cups of boiling pasta water for further use. 
  • Remove the skillet and add in the pasta. Add in a dash of pasta water if it needs to be thinned. Taste to see if any additional seasoning is required. Do add salt and pepper if necessary.
